Homemade Roasted Butternut Squash with Ground Beef

A delightful fall-inspired dish combining roasted butternut squash, ground beef, and colorful veggies for a nourishing and satisfying meal.

  • 1 small butternut squash
  • 6 yellow potatoes
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 sprigs fresh rosemary
  • 1 lb Laura’s Lean ground beef
  • 3 large carrots, diced
  • 4 garlic cloves, minced
  • 1/2 white onion, diced
  • 12 tbsp olive oil for sautéing

Instructions

  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  2. Prepare the Butternut Squash and Potatoes: Peel, seed, and dice the butternut squash into bite-sized pieces. Toss them in 1 tablespoon of olive oil, salt, and pepper on a large baking sheet.
  3. Roast the Veggies: Place your baking sheet in the preheated oven and roast for about 25–30 minutes.
  4. Sauté the Aromatics: While the veggies are roasting, heat a pan over medium heat. Add another tablespoon of olive oil and toss in the diced onion and garlic.
  5. Cook the Ground Beef: Add the ground beef to the pan, breaking it up with a wooden spoon and season with salt, pepper, and chopped fresh rosemary.
  6. Combine and Finish Roasting: Once the beef is ready, add in the diced carrots and continue cooking for a few minutes.
  7. Taste and Adjust: Give everything a little taste before serving, and feel free to adjust the seasoning.

Notes

Feel free to substitute ingredients based on your preferences or what you have on hand. This dish can be made in advance and freezes well.
