Spanish Chicken Rice

A flavorful and protein-packed dish combining juicy chicken, fragrant rice, and vibrant peppers, perfect for family gatherings.

  • 4 bone-in chicken thighs
  • 2 cups long-grain rice
  • 3 cups chicken stock
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • Fresh cilantro for garnish
  • 2 limes, cut into wedges
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken thighs generously with salt and black pepper. Once the oil is hot, place the chicken skin-side down into the pan. Let it sear without moving it for about 5-7 minutes until the skin is golden brown and crispy.
  2. Flip the chicken over and remove it from the pan. In the same skillet, toss in the diced onion and sauté for about 3-4 minutes until they’re translucent and fragrant. Add the minced garlic and both bell peppers, cooking for another 3 minutes until they soften.
  3. Sprinkle in the turmeric powder and smoked paprika, stirring to coat the vegetables.
  4. Pour in the long-grain rice and stir well to coat each grain with the fragrant mixture.
  5. Pour in the chicken stock and give it all a gentle stir. Bring the mixture to a simmer and nestle the seared chicken back into the skillet, skin-side up. Cover the skillet with a lid and reduce the heat to low, letting it cook for about 20-25 minutes.
  6. Check the rice after about 25 minutes; if all the liquid has been absorbed and the chicken is cooked through, let it rest for about 5 minutes off the heat.
  7. Garnish with fresh cilantro and squeeze a bit of lime over the top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen in portioned containers for up to 3 months.
