  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 8 ounces cream cheese, softened and cut into small pieces
  • 1 tablespoon coarse sugar (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss the sliced strawberries with 2 tablespoons of granulated sugar, lemon juice, and cornstarch. Set aside to macerate for about 15 minutes.
  3. Melt the unsalted butter in a bowl, then mix in the flour, 1 cup of granulated sugar, baking powder, salt, and milk until just combined.
  4. Stir in the vanilla extract until well incorporated.
  5. Pour half of the batter into a greased 9×13-inch baking dish. Add dollops of cream cheese and top with the macerated strawberries and their juices. Pour the remaining batter on top.
  6. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  7. Cool for about 15-20 minutes before serving.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat. Consider variations like adding blueberries or nuts for different flavors.
