Turkey Sweet Potato Hash

A hearty and nutritious Turkey Sweet Potato Hash packed with protein and flavor, perfect for busy weeknights or weekend brunches.

  • 1 pound ground turkey
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced (any color)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep your ingredients: Start by peeling and dicing your sweet potatoes into small cubes (about ½ inch). Chop the bell peppers and onion while you’re at it, and mince your garlic.
  2. Heat the pan: In a large skillet or frying pan, heat about 2 tablespoons of olive oil over medium heat.
  3. Sauté the veggies: Add your diced onion to the hot oil and sauté for about 3-4 minutes until they become translucent.
  4. Add the sweet potatoes: Toss in sweet potato cubes, season with salt and pepper, and cook for about 10-15 minutes until they begin to soften.
  5. Add the turkey: Push the veggies to the side and add ground turkey, breaking it up and seasoning with smoked paprika, cumin, salt, and pepper. Cook until browned, about 5-7 minutes.
  6. Mix it all up: Once cooked, mix everything together in the skillet and add minced garlic and bell peppers. Cook for another 3-4 minutes.
  7. Plate it up: Serve your Turkey Sweet Potato Hash warm, optionally garnished with fresh herbs.

Notes

This dish can be made ahead of time and is perfect for meal prep. Store it in an airtight container for up to four days.
