Beef & Butternut Squash Chili

A hearty and flavorful chili made with ground beef and butternut squash, perfect for chilly nights and meal prep.

  • 1 lb ground beef
  • 2 cups butternut squash, cubed
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for sautéing
  • 1 cup water or broth

Instructions

  1. Prep your ingredients by peeling and cutting the butternut squash into small cubes.
  2. Sauté the onions and garlic in olive oil until translucent, about 3-5 minutes.
  3. Brown the ground beef in the pot, breaking it apart until browned for about 5-7 minutes.
  4. Add the chili powder, cumin, and paprika to the beef and cook for 1 minute.
  5. Incorporate the butternut squash into the pot and cook for 2-3 minutes.
  6. Mix in the diced tomatoes and beans along with 1 cup of water or broth, and bring to a gentle boil.
  7. Simmer for 20-25 minutes on low heat, stirring occasionally, until the squash is tender.
  8. Season to taste with salt and pepper before serving.

Notes

Top with shredded cheese and sour cream for extra flavor. Adjust spices to your taste preference.
