One Pot Creamy Garlic Pasta

A cozy and quick one-pot meal featuring creamy garlic pasta that’s flavorful and satisfying.

  • 8 oz pasta (fettuccine or penne preferred)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 cups milk (whole or plant-based)
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: In a large pot, add 4-5 cups of water and bring to a rolling boil. Add pasta and a pinch of salt. Cook according to package instructions, around 7-10 minutes until al dente.
  2. Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Create the Creamy Base: Don’t drain the pasta! Add milk to the pot with the sautéed garlic and stir.
  4. Bring it All Together: Let it simmer for 3-5 minutes, then add Parmesan cheese to create a creamy sauce. Adjust with pasta water if too thick.
  5. Serve and Garnish: Dish the pasta into bowls and garnish with parsley. Enjoy!

Notes

Add sautéed greens or a side salad for a complete meal. Leftovers reheat beautifully with a splash of milk.
