  • 1 tbsp unsalted butter, divided
  • 1 small yellow onion, finely chopped
  • 1 small red bell pepper, diced
  • 1 lb ground Italian sausage (hot sausage recommended)
  • Salt and freshly ground black pepper, to taste
  • 4 garlic cloves, minced
  • 2.5 lbs butternut squash, peeled, seeded, and chopped into 1-inch cubes
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 can (15.5 oz) great northern beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • Optional Garnishes: Heavy cream and chopped fresh parsley

Instructions

  1. Sauté the aromatics: In a large pot, melt 1 tablespoon of unsalted butter over medium heat. Add the finely chopped onion and diced red bell pepper. Sauté for about 5-7 minutes until the onion is translucent.
  2. Add the sausage: Crumble the ground Italian sausage into the pot. Cook for about 7-10 minutes until browned.
  3. Incorporate the garlic: Toss in the minced garlic and sauté for an additional minute.
  4. Toss in the butternut squash cubes. Stir and let them cook for about 5 minutes.
  5. Pour in the broth and tomatoes. Add the bay leaf, beans, and season with salt and pepper. Bring to a gentle simmer and cover. Let it simmer for about 30-35 minutes.
  6. Blend it up (optional): Use an immersion blender to puree the soup if desired.
  7. Taste and adjust seasoning as needed.
  8. Serve the soup in bowls and garnish with heavy cream and fresh parsley.

Notes

For a vegetarian option, substitute sausage with a plant-based alternative and use vegetable broth.
