Easy and Wholesome Orzo Salad

A vibrant orzo salad packed with fresh veggies and feta, perfect for any occasion.

Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: Start by bringing a pot of salted water to a boil. Add your 1 cup of orzo pasta. Cook it according to package instructions (usually 7-10 minutes) until al dente. A little tip: Save a cup of pasta water before draining!
  2. Prepare the Veggies: While the orzo is cooking, wash and chop your cherry tomatoes, cucumber, bell pepper, and red onion. Cut the veggies into bite-sized pieces.
  3. Drain the Orzo: Once your orzo is done, drain it and rinse under cold water to stop the cooking process.
  4. Mix the Salad: In a large bowl, toss the cool orzo with the chopped veggies.
  5. Add the Dressing: Drizzle the olive oil and lemon juice over the salad and season with salt and pepper. Toss until well mixed.
  6. Feta Finishing Touch: Sprinkle on your crumbled feta cheese and chopped parsley. Give it another gentle toss.
  7. Chill & Serve: Serve this salad right away or pop it in the fridge for about 30 minutes to let the flavors meld together.

Notes

You can serve it alongside grilled chicken or fish for a complete meal.
