Refreshing Orzo Salad

A vibrant orzo salad packed with fresh veggies, a tangy lemon dressing, and creamy feta, perfect for lunch or as a side dish.

  • 1 cup orzo pasta
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the orzo and cook according to the package instructions, usually around 8-10 minutes until it’s al dente. Remember to stir it occasionally!
  2. While your orzo is cooking, now’s the perfect time to chop up those colorful veggies! Dice the red bell pepper, cucumber, and red onion.
  3. Slice your cherry tomatoes in half.
  4. Once the orzo is ready, drain it and run cold water over it to stop the cooking process. In a large bowl, combine the orzo, diced veggies, crumbled feta, and chopped parsley. Toss gently to ensure everything gets acquainted!
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour it over the salad and toss again to coat evenly.
  6. Take a forkful of your creation and give it a taste. Adjust seasoning as needed.
  7. Chill in the fridge for about 30 minutes if desired.
