Patriotic Ice Cream Sandwiches

Delightful red and blue ice cream sandwiches that embody the spirit of summer festivities.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 tbsp red food coloring
  • A pinch of salt
  • Blue velvet cookie ingredients (swap red food coloring for blue)
  • Vanilla ice cream
  • Red, white, and blue sprinkles

Instructions

  1. Prep your oven to 350°F (175°C).
  2. Combine the ingredients for the red velvet cookies in a bowl until creamy.
  3. Scoop tablespoon-sized amounts of dough onto a lined baking sheet and bake for 12-15 minutes.
  4. Repeat the initial steps for the blue velvet cookies.
  5. Assemble sandwiches by scooping vanilla ice cream between one red and one blue cookie.
  6. Roll the edges in festive sprinkles.
  7. Chill in the freezer for 30 minutes and then serve.

Notes

Chill the assembled sandwiches longer if necessary to prevent melting.
