  • 1 cup blueberries, pureed
  • 1 cup vanilla yogurt
  • 1/2 cup whipped cream
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your crust: Fit the pre-made pie crust into a pie dish, prick the bottom with a fork, and bake at 350°F (175°C) for about 10 minutes until golden brown.
  2. Make the strawberry puree: Blend fresh strawberries until smooth and set aside.
  3. Make the blueberry puree: Blend blueberries until smooth.
  4. Mix your filling: In a mixing bowl, combine vanilla yogurt and whipped cream, folding them together gently.
  5. Layer like a pro: Pour half of the yogurt mixture into the crust, add half of the strawberry puree, swirl, then add the remaining yogurt mixture and top with blueberry puree, swirling again.
  6. Chill time: Refrigerate for at least 4 hours or overnight to set.
  7. Serve and enjoy: Slice the pie and serve with whole berries and mint if desired.

Notes

For an extra crunch, consider adding crushed graham crackers between layers. This pie can be made ahead of time and tastes better after chilling overnight.
