Sweet Peach Cookies

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the dry ingredients in a medium bowl, whisking together the flour, salt, and baking soda.
  3. Cream the butter with both sugars in a large bowl until creamy.
  4. Add the egg and vanilla, beating until combined.
  5. Mix in the dry ingredients gradually.
  6. Fold in the diced peaches and peach preserves gently.
  7. Scoop rounded balls of dough onto a lined baking sheet.
  8. Bake for 12-15 minutes until golden brown around the edges.
  9. Cool on the baking sheet for 5 minutes before transferring to wire racks.
