A flavorful and juicy Peruvian chicken recipe marinated with spices and lime, perfect for any dinner.

  • 4 chicken thighs, bone-in, skin-on
  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon oregano
  • Salt and black pepper to taste
  • Juice of 2 limes
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, minced garlic, cumin, paprika, oregano, salt, pepper, and lime juice. Whisk until smooth. Place the chicken thighs and drumsticks in the bowl, ensuring they’re well coated. Let marinate for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C).
  3. Arrange the chicken on a lined baking sheet, skin-side up. Ensure pieces aren’t crowded.
  4. Drizzle with some leftover marinade for added flavor.
  5. Roast the chicken for about 35-45 minutes until they reach an internal temperature of 165°F (75°C).
  6. Check for doneness using a meat thermometer.
  7. Let the chicken rest for about 10 minutes before garnishing with fresh cilantro.
