  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • Salt and pepper to taste
  • 1/4 cup cilantro
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 jalapeño, seeded
  • Juice of 1 lime

Instructions

  1. Marinate the Chicken: In a large bowl, combine the olive oil, ground cumin, paprika, salt, and pepper. Mix well until you have a smooth paste. Now, add the chicken breasts, making sure each piece is well coated. Let them marinate for at least 30 minutes.
  2. Preheat the Grill: While the chicken is marinating, preheat your grill to medium-high heat.
  3. Prepare the Creamy Green Sauce: In a food processor, combine the cilantro, mayonnaise, Greek yogurt, jalapeño, and lime juice. Blend until smooth and creamy.
  4. Grill the Chicken: Once your grill is hot, add the marinated chicken breasts. Grill for about 6-7 minutes on one side without moving them to achieve grill marks. Flip them over and grill for another 5-7 minutes.
  5. Rest and Slice: After grilling, remove the chicken from the grill and let it rest for about 5 minutes. Once rested, slice it up.
  6. Serve with the Green Sauce: Place the grilled chicken on a serving platter, drizzle with the creamy green sauce, or serve it on the side.
