The Perfect Pumpkin Bread

A delightful pumpkin bread that captures the essence of fall with its moist, spiced slices, perfect for breakfast or dessert.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup chopped nuts (optional)
  • For the streusel topping: 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon pumpkin spice
  • 1/4 cup butter
  • For the glaze: 1/2 cup maple syrup
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan with cooking spray or butter and flour.
  3. Mix the flour, sugar, baking soda, baking powder, salt, and spices in a large bowl.
  4. Combine in another bowl the canned pumpkin, vegetable oil, and eggs.
  5. Combine the dry ingredients with the wet ingredients gently.
  6. Add nuts or chocolate chips if desired.
  7. Make the streusel by mixing brown sugar, flour, pumpkin spice, and melted butter.
  8. Pour the batter into the prepared loaf pan and top with streusel.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Cool the bread in the pan for 10 minutes before transferring to a wire rack.

Notes

For added sweetness, feel free to increase sugar or add chocolate chips. Can be frozen for up to three months.
