Pumpkin Cobbler

A warm, gooey pumpkin cobbler that captures the essence of autumn with rich flavors and a decadent caramel drizzle.

  • 1 can (15 oz) pumpkin puree
  • 1 cup granulated sugar
  • 1 cup milk
  • 3/4 cup all-purpose flour
  • 1/2 cup butter, melted
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the pumpkin puree, granulated sugar, milk, melted butter, vanilla extract, and pumpkin pie spice in a large bowl until smooth.
  3. Add the flour, baking powder, and salt, and gradually incorporate into the wet mixture.
  4. Pour the batter into a greased 9×13 inch baking dish.
  5. Add half a cup of caramel sauce over the top of the batter and swirl with a knife.
  6. Bake for 45–50 minutes, until golden brown and a toothpick comes out clean.
  7. Let it cool for 10 minutes before serving.

Notes

Serve warm with vanilla ice cream and additional caramel sauce. Feel free to add nuts or make variations like chocolate chip or apple-pumpkin.
