Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the dry ingredients in a large bowl: flour, oats, baking soda, cinnamon, nutmeg, and salt.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until incorporated.
  5. Mix in pumpkin puree until fully combined.
  6. Combine the wet and dry mixtures gently, ensuring not to overmix.
