Pumpkin Rolls

A delicious and nostalgic pumpkin roll recipe perfect for fall gatherings, filled with a creamy frosting and wrapped up in warm spices.

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup powdered sugar
  • 8 oz cream cheese
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your baking sheet by lining a 15×10-inch jelly roll pan with parchment paper and spraying it lightly with cooking spray.
  3. Mix the wet ingredients: in a large mixing bowl, whisk together pumpkin puree, sugar, and eggs until smooth.
  4. Combine the dry ingredients: in another bowl, mix flour, baking soda, cinnamon, nutmeg, and salt, then fold into the wet mixture.
  5. Spread the batter evenly in the jelly roll pan and bake for 15-20 minutes.
  6. Cool the roll: sprinkle powdered sugar on a second piece of parchment paper, flip the cake onto it, and roll it up to cool.
  7. Make the cream cheese filling by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
  8. Unroll the cooled cake and spread the cream cheese mixture evenly, then roll it back up.
  9. Chill in plastic wrap for at least 30 minutes.
  10. Slice and serve with a dusting of powdered sugar.
