Roasted Sweet Potato Kale Salad

A deliciously simple salad that combines roasted sweet potatoes, kale, and quinoa for a healthy, satisfying meal.

Ingredients

  • 2 medium sweet potatoes (peeled and diced into 1-inch cubes)
  • 12 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 bunches of kale (washed and massaged)
  • 1 cup cooked quinoa (cooled)
  • 1/2 cup golden raisins
  • 1/2 cup chopped pecans
  • 1/4 cup diced red onion
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon maple syrup
  • 1/4 cup olive oil (for dressing)
  • 1/2 teaspoon kosher salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the sweet potatoes by peeling and dicing them into 1-inch cubes, then tossing with olive oil, salt, and pepper.
  3. Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
  4. Cook the quinoa according to package instructions and let it cool.
  5. Massage the kale in a large bowl until tender.
  6. Prepare the dressing by whisking together mustard, lemon juice, maple syrup, olive oil, salt, and pepper.
  7. Assemble the salad by combining kale, quinoa, roasted sweet potatoes, raisins, pecans, onion, and goat cheese. Drizzle with dressing and toss gently.

Notes

This salad can be prepped ahead of time but dress right before serving to avoid wilting of the kale.
