Rotisserie Chicken Broccoli Pasta

A wholesome, creamy pasta dish with rotisserie chicken and broccoli that takes just 30 minutes to prepare.

  • 2 cups rotisserie chicken, shredded
  • 8 oz pasta (penne or bowtie)
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Once boiling, add the pasta of your choice. Cook according to package instructions until al dente—typically 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the broccoli florets and sauté for about 3-4 minutes until they turn bright green and are just tender.
  4. Lower the heat and pour in the heavy cream. Stir well, adding the grated Parmesan cheese until melted and creamy.
  5. Add the shredded rotisserie chicken to the skillet, then the drained pasta. Toss everything together until well-mixed.
  6. Transfer to a serving bowl and garnish with fresh cracked pepper or extra cheese if desired.

You can use any pasta shape you love and substitute ingredients as needed for dietary preferences.
