Rum-Soaked Fried Pineapple

A delightful and indulgent treat featuring pineapple rings soaked in rum, coated in a crispy coconut batter, and served with a creamy dip.

  • 8 Pineapple Rings
  • 1 Cup Dark Rum
  • 1 Cup Coconut Rum
  • 1 ½ Cups All-Purpose Flour
  • 10 oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 oz Cream Cheese, Softened
  • ½ Cup Powdered Sugar

Instructions

  1. Prepare the pineapple by soaking the rings in dark rum and coconut rum for at least 30 minutes.
  2. Whip up the batter by combining flour, eggs, and coconut milk until smooth.
  3. Toast the coconut flakes in a dry pan over medium heat until golden brown.
  4. Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Batter the pineapple rings by dipping them into the batter and rolling them in toasted coconut.
  6. Fry the coated rings until golden brown, about 2-3 minutes per side.
  7. Drain the fried rings on a paper towel to absorb excess oil.
  8. Prepare the cream cheese dip by beating cream cheese and powdered sugar together until smooth.

Notes

Serve warm with cream cheese dip and garnish with toasted coconut or lime zest.
