Ruth’s Chris Stuffed Chicken Copycat

A delightful fusion of tender chicken, creamy cheeses, and vibrant spinach that creates an explosion of flavor in every bite.

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Grab your boneless, skinless chicken breasts. Carefully slice each breast horizontally to create a pocket for the stuffing.
  2. Season the chicken with salt and pepper on both sides.
  3. In a medium bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, and salt and pepper. Mix until well combined.
  4. Grab a spoonful of the filling and carefully stuff each chicken pocket, sealing them tightly with toothpicks if needed.
  5. Heat a skillet over medium-high heat and drizzle with olive oil. Sear each side of the stuffed chicken for about 4-5 minutes until golden brown.
  6. Transfer the stuffed chicken to an oven-safe dish. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let them rest for a few minutes before slicing to reveal the gooey filling.

Notes

Serve with fresh mixed greens or roasted vegetables. Consider adding sun-dried tomatoes or mushrooms to the filling for added flavor.
