Santa Fe Salad

A vibrant and nutritious salad with black beans, grilled corn, and creamy avocado, perfect for any occasion.

  • 2 cups mixed salad greens (spinach, arugula, or romaine)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 lime, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prep your veggies by washing greens and drying them.
  2. Rinse the black beans under cold water.
  3. Chop the corn off the cob or prepare frozen/canned corn.
  4. Dice avocado, red bell pepper, and cherry tomatoes.
  5. Mix everything together in a large bowl.
  6. Add cilantro and feta cheese to the salad.
  7. Whisk lime juice, olive oil, cumin, salt, and pepper in a small bowl.
  8. Drizzle the dressing over the salad and toss gently.
  9. Taste and adjust seasoning as necessary.
  10. Chill the salad in the fridge for 30 minutes if preparing ahead or serve immediately.

Notes

This salad can be made ahead of time; keep the dressing separate until serving to maintain freshness.
