  • 4 medium Red Potatoes
  • 1 medium Onion (diced, caramelized)
  • 1 cup Shredded Cheese (Colby Jack or pepper jack)
  • 1/2 cup Mayo
  • 1/4 cup Ketchup (low-sugar)
  • 1 tbsp Mustard (Dijon)
  • 1 tbsp Cajun Seasoning
  • 1 cup Pickles (or cucumbers)
  • 2 cups Lettuce (any mix of leafy greens)

Instructions

  1. Prep Your Potatoes: Wash and dice red potatoes into bite-sized cubes, toss with olive oil, salt, and pepper.
  2. Roast the Potatoes: Preheat oven to 425°F (220°C), spread potatoes on a baking sheet, bake for 25-30 minutes.
  3. Caramelize the Onions: Heat olive oil in a skillet, add onions, stir until golden brown (15-20 minutes).
  4. Cook the Ground Beef: In another pan, heat olive oil, add ground beef and Cajun seasoning, cook for 8-10 minutes.
