Lava Flow Popsicles

Refreshing homemade popsicles featuring layers of juicy fruits and creamy coconut milk that evoke the flavors of a tropical vacation.

  • 1 1/2 cups cubed pineapple
  • 1 cup diced mango
  • 1/2 cup coconut milk
  • 2 1/2 cups strawberries
  • 1/4 cup orange juice
  • 1 tablespoon honey or agave (optional)

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients. Wash your fruits thoroughly!
  2. Blend the pineapple layer: In a blender, add the cubed pineapple and half of the coconut milk. Blend until smooth.
  3. Pour and freeze: Pour the pineapple mixture into popsicle molds, filling them about one-third of the way.
  4. Blend the strawberry layer: Rinse out the blender, then add your strawberries, orange juice, and any sweetener. Blend until smooth.
  5. Add the strawberry layer: Carefully pour the strawberry mixture on top of the pineapple layer in the molds.
  6. Blend the mango layer: Rinse the blender again, and now blend your diced mango with the remaining coconut milk.
  7. Top it off: Gently pour the mango mixture into the molds, filling each one to the brim.
  8. Insert sticks and freeze: Place the sticks into the popsicles and freeze for at least 4-6 hours.
  9. Release your popsicles: When you’re ready to enjoy, run warm water over the outside of the popsicle mold to help them release.

Notes

These popsicles are a fun project to make with kids and can be customized with different fruits and flavors.
