Strawberry-Nectarine Fruit Crisp with Ginger Streusel

A delightful and easy-to-make dessert that combines juicy strawberries and nectarines with a crispy ginger-flavored streusel topping.

  • 1 lb. strawberries (hulled and quartered)
  • 1 lb. diced nectarines (about 3 large)
  • 1/2 cup plus 2 Tbsp. coconut sugar
  • Zest and juice of 1 lemon
  • 1 1/2 Tbsp. cornstarch
  • 1/2 tsp. kosher salt (divided)
  • 1 cup old-fashioned oats
  • 1/2 cup almond flour
  • 1 tsp. ground cinnamon
  • 1 tsp. freshly grated ginger
  • 4 Tbsp. chilled unsalted butter (cut into pieces)
  • Optional: classic or plant-based vanilla ice cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing it lightly.
  3. Mix the fruits in a large bowl with coconut sugar, lemon juice, lemon zest, cornstarch, and 1/4 tsp. kosher salt.
  4. Transfer the fruit mixture into your prepared baking dish.
  5. Prepare the ginger streusel by mixing oats, almond flour, ground cinnamon, ginger, remaining kosher salt, and coconut sugar in another bowl.
  6. Incorporate the butter pieces into the dry mixture until crumbly.
  7. Sprinkle the streusel over the fruit layer.
  8. Bake for 30-35 minutes or until golden brown.
  9. Cool for about 10-15 minutes before serving.

Notes
