Italian Peach Summer Cookies (Pesche Dolci)

Delightful peach-shaped cookies reminiscent of summer days, filled with flavorful peach preserves.

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

  • 1/2 cup peach preserves
  • Peach syrup (for dipping)
  • Sugar (for rolling)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cream the butter and sugar: Beat the softened butter until smooth, then gradually add the sugar.
  4. Add the eggs: Include the eggs one at a time, mixing until fully incorporated.
  5. Combine wet and dry ingredients: Gradually add the dry mixture to the wet ingredients until just combined.
  6. Shape the cookies: Scoop about a tablespoon of dough and roll it into a ball.
  7. Fill with peach preserves: Create an indentation in each ball and fill with preserves.
  8. Bake: Place the cookie trays in the oven and bake for 15-18 minutes until lightly golden.
  9. Cool and roll: Let them cool slightly, then roll in sugar.
  10. Dipping preparation: Serve with a small bowl of peach syrup for dipping.

Notes

Experiment with different fruit preserves or add nuts for a crunch. These cookies can also be frozen before baking.
