Deliciously Simple Crustless Squash Pie

A comforting and vibrant crustless squash pie, perfect for any meal.

Ingredients

  • 5 cups sliced squash (yellow or zucchini, or a mix)
  • 2 tablespoons butter
  • ¼ to cup onion (chopped)
  • 1 clove garlic (minced)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh oregano (chopped)
  • 67 leaves of basil (chopped)
  • 2 cups mozzarella cheese (shredded)
  • 2 eggs (beaten)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the butter in a large skillet over medium heat, add onions, and cook until translucent, about 3-4 minutes. Add garlic and cook for another minute.
  3. Cook the sliced squash with salt, black pepper, and oregano for about 5-7 minutes until slightly tender.
  4. Combine beaten eggs, sautéed squash mixture, shredded mozzarella, and chopped basil in a mixing bowl.
  5. Transfer the mixture to a greased 9-inch pie dish or square baking dish and spread evenly.
  6. Bake for 30-35 minutes until the top is golden brown and a knife comes out clean.
  7. Cool slightly for about 10 minutes before serving.

Notes

Serve warm with fresh herbs on top or alongside a simple salad. Can add proteins or alternate cheeses for variation.
