  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1.5 cups fresh strawberries (hulled and quartered)
  • 1 tbsp granulated sugar (for strawberries)
  • 1/2 tsp lemon juice (for strawberries)
  • 1.5 cups fresh mango (peeled and diced)
  • 1 tbsp granulated sugar (for mango)
  • 1/2 tsp lemon juice (for mango)

Instructions

  1. Prep the Strawberries: Begin by hulking and quartering the strawberries, placing them in a medium bowl. Sprinkle with 1 tablespoon of sugar and 1/2 teaspoon of lemon juice. Gently toss to mix, and set aside. Allow them to macerate for about 15-20 minutes.
  2. Prepare the Mango: Peel and dice your mango into small chunks. Add them to another bowl, sprinkling with 1 tablespoon of sugar and 1/2 teaspoon of lemon juice as before. Toss and set aside.
  3. Make the Ice Cream Base: In a large mixing bowl, combine the heavy cream, whole milk, 3/4 cup of sugar, a pinch of salt, and 1 teaspoon of vanilla extract. Mix until well combined.
  4. Chill the Mixture: Cover and refrigerate this mixture for at least 1 hour.
  5. Churn the Ice Cream: Pour the chilled cream mixture into your ice cream maker and churn for about 20-25 minutes.
  6. Add Strawberry and Mango: Once the ice cream is nearly done churning, add the macerated strawberries and juices, then the diced mango.
  7. Freeze: Transfer the mixture to an airtight container and freeze for at least 4 hours, or overnight.
  8. Serve and Enjoy: Let sit at room temperature for a few minutes before scooping.

Notes

For the best texture, use firm fresh fruits. Try adding garnishes like fresh mint or shredded coconut when serving.
