  • 1/4 cup diced tomatoes
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (for the garlic sauce)

Instructions

  1. Cook your rice according to package instructions.
  2. Prepare the chicken by seasoning with spices and grilling for 6-7 minutes on each side.
  3. Sauté your corn kernels in the same skillet until caramelized.
  4. Assemble the bowl starting with rice, followed by chicken, sautéed corn, black beans, red onion, tomatoes, and cotija cheese.
  5. Create the creamy sauce by mixing sour cream or Greek yogurt with lime juice and salt.
  6. Finish with freshly chopped cilantro on top.
