Nectarine Streusel Pie

A delightful pie showcasing fresh nectarines with a buttery streusel topping, perfect for summer gatherings.

  • 45 fresh nectarines, sliced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 prepared pie crust
  • 1 tablespoon butter, cut into small pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 cup chilled butter, cut into small pieces
  • 1/2 teaspoon cinnamon
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the pie crust in a 9-inch pie plate.
  3. Combine sliced nectarines, granulated sugar, lemon juice, cornstarch, and vanilla in a bowl.
  4. Pour the nectarine mixture into the prepared pie crust.
  5. Create the streusel topping with flour, oats, brown sugar, cinnamon, and chilled butter.
  6. Assemble the pie by sprinkling the streusel over the filling.
  7. Bake for 15 minutes at 425°F (220°C), then lower the temperature to 350°F (175°C) and bake for 30-40 minutes.
  8. Cool the pie for 10-15 minutes before serving.

Notes

Serve warm with vanilla ice cream for an extra treat. You can also try using peaches if nectarines are out of season.
