Watermelon Mint Salad

A refreshing salad that combines the sweetness of watermelon with the coolness of mint and a zesty twist of lime.

Ingredients

  • 1/2 fresh watermelon (cut into cubes)
  • 1/4 teaspoon kosher salt
  • 2 teaspoons fresh lime juice (approx. the juice of 1/2 a lime)
  • 1 tablespoon honey (omit for Whole30)
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh mint (chopped)

Instructions

  1. Prep the watermelon by cutting it into small, bite-sized cubes and placing them in a large mixing bowl.
  2. Add the kosher salt over the watermelon cubes and let sit for 5 minutes.
  3. Squeeze half a lime right over the watermelon to add acidity.
  4. Drizzle in honey and olive oil, then gently fold everything together.
  5. Chop the mint leaves finely and scatter them over the watermelon, then toss gently.
  6. Taste the salad and adjust lime or salt as needed.
  7. Chill the salad in the fridge for about 30 minutes if time permits.

Notes

Serve the salad in a beautiful bowl or individual glasses garnished with a sprig of mint. Pairs well with grilled meats or fish.
