Sweet Potato Shepherd’s Pie

A hearty and healthy twist on the classic shepherd’s pie, featuring sweet potatoes and ground turkey.

Ingredients

  • 1 lb Ground Turkey
  • 3 cups Mixed Vegetables (peas, carrots, corn)
  • 2 large Sweet Potatoes
  • 2 tablespoons Butter
  • Salt, to taste
  • Pepper, to taste
  • 1 Onion, chopped
  • 2 cloves Garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into cubes and cook them in salted water until tender, about 15-20 minutes.
  3. Drain the sweet potatoes, mash with butter, salt, and pepper until smooth.
  4. Heat olive oil in a skillet over medium heat, sauté the onion and garlic until fragrant, about 2-3 minutes.
  5. Add the ground turkey and cook until browned, about 5-7 minutes.
  6. Stir in the mixed vegetables and cook until heated through.
  7. Transfer the turkey and vegetable mix into a baking dish.
  8. Spoon the sweet potato mash on top, spreading it out evenly.
  9. Bake for 20 minutes until the top is golden and bubbling.
  10. Cool for a few minutes before serving.

Notes

For added flavor, mix in herbs like thyme or rosemary while cooking the turkey.
