Teriyaki Chicken Rice Bowl

A quick and flavorful Teriyaki Chicken Rice Bowl that’s perfect for dinner with family and friends.

  • 4 boneless skinless chicken breasts, cubed
  • 1 Tbsp. olive oil
  • 1/2 cup low sodium soy sauce
  • 1/2 cup water
  • 3 Tbsp. packed light brown sugar
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. sesame oil (optional)
  • 1 tsp. ground ginger
  • 2 tsp. minced garlic
  • 2 Tbsp. honey
  • 3 tsp. cornstarch
  • Sesame seeds and chopped green onions for garnish
  • Rice for serving
  • Steamed veggies for serving

Instructions

  1. Prep your ingredients. Cube the chicken breasts into bite-sized pieces.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Cook the chicken until browned and cooked through, about 5-7 minutes.
  4. Whisk together the soy sauce, water, brown sugar, rice vinegar, sesame oil, ginger, garlic, and honey in a small bowl.
  5. Thicken the sauce by mixing cornstarch with a tablespoon of water, then adding it to the skillet with the chicken.
  6. Taste the sauce and adjust sweetness or spice as needed.
  7. Serve the chicken over cooked rice and garnish with sesame seeds and green onions.

Notes

Add veggies during cooking for a one-bowl meal. Tofu can be swapped for chicken for a vegetarian option.
