Tropical Mango Passionfruit Swirl Ice Cream

A delightful homemade ice cream bursting with sweet and tangy tropical flavors of mango and passionfruit, perfect for summer indulgence.

  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 3/4 cup Granulated Sugar
  • 6 Large Egg Yolks
  • 1 tsp Vanilla Extract
  • Pinch Salt
  • 2 Large Ripe Mangoes, peeled, pitted, and diced (about 2 cups pulp)
  • 1 tbsp Lime Juice (freshly squeezed)
  • 2 tbsp Granulated Sugar (or to taste)
  • 1/2 cup Passionfruit Pulp (from about 810 passion fruits, seeds included)
  • 1/4 cup Granulated Sugar (or to taste)

Instructions

  1. Prepare the Ice Cream Base: In a medium saucepan over medium heat, combine the heavy cream, whole milk, and 3/4 cup granulated sugar. Stir until the sugar is dissolved and the mixture begins to steam.
  2. Whisk the Egg Yolks: In a bowl, whisk together the egg yolks until frothy.
  3. Temper the Eggs: Gradually pour about half of the hot cream mixture into the egg yolks while whisking. Then pour the egg mixture back into the saucepan with the remaining cream.
  4. Thicken the Base: Continue cooking over medium-low heat, stirring, until the ice cream base thickens enough to coat the back of a spatula (about 5-10 minutes).
  5. Chill the Base: Pour the mixture into a bowl and let it cool to room temperature. Cover and chill in the fridge for at least 4 hours.
  6. Prepare the Mango and Passionfruit Purees: In a blender, combine diced mangoes, 1 tablespoon lime juice, and 2 tablespoons sugar. Blend until smooth. Scoop the passionfruit pulp into a bowl.
  7. Mix It All Together: Once the ice cream base is chilled, stir it and gently fold in the mango puree and passionfruit pulp, creating swirls.
  8. Freeze: Transfer the mixture to an airtight container and freeze for at least 6 hours, or until firm.

Notes

For a healthier alternative to the sugar, consider using agave syrup or coconut sugar. You can also substitute half of the heavy cream with coconut cream for a coconut flavor.
