Vietnamese Lemongrass Chicken

A delicious and vibrant dish of chicken marinated in fresh lemongrass and spices, perfect for a flavorful meal.

  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 stalks fresh lemongrass, trimmed and finely minced (or 3 tablespoons lemongrass paste)
  • 3 cloves garlic, minced
  • 1 small onion, finely sliced
  • 2 tablespoons fish sauce (or soy sauce for milder flavor)
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • Optional garnish: sliced red chili, fresh cilantro, lime wedges

Instructions

  1. Prep the Ingredients: Start by washing and slicing your chicken into bite-sized pieces and mince your lemongrass and garlic.
  2. Marinate the Chicken: In a bowl, combine minced lemongrass, garlic, onion, fish sauce, oyster sauce, light soy sauce, brown sugar, and black pepper. Add chicken and toss well. Cover and let sit for 30 minutes.
  3. Heat the Pan: Heat vegetable oil in a large sauté pan over medium-high heat until shimmering.
  4. Cook the Chicken: Add the marinated chicken mixture to the pan. Stir-fry for about 5–7 minutes until golden brown and cooked through.
  5. Finish Cooking: Taste and adjust seasonings if needed. The brown sugar should caramelize slightly for added sheen.
  6. Serve and Garnish: Transfer to a serving platter, topping with sliced red chilies, cilantro, and lime wedges.

Notes

Serve over jasmine rice or with vegetables. Don’t forget the lime wedges for extra zest!
