Instructions

  1. Gather your ingredients.
  2. Prepare the watermelon by cutting it into bite-sized cubes.
  3. Slice the cucumber into similar-sized pieces.
  4. Chop the red onion finely.
  5. Chop the fresh mint into a chiffonade.
  6. Crumble the feta cheese into pieces.
  7. Make the dressing by whisking together lime juice, olive oil, salt, and pepper.
  8. Combine all ingredients in a large bowl and toss gently.
  9. Taste the salad and adjust seasoning if necessary.
  10. Chill in the fridge for 30 minutes for best flavor.
