Beef Bourguignon

A comforting French classic stew made with tender beef, red wine, and aromatic vegetables, perfect for special occasions.

Ingredients

  • Beef (2-3 pounds of chuck or brisket)
  • Mushrooms (8 ounces, preferably cremini or button)
  • Carrots (2-3 medium)
  • Red Wine (750 ml, preferably Pinot Noir)
  • Onion (1 large)
  • Garlic (2-3 cloves, minced)
  • Thyme (1 tablespoon fresh or 1 teaspoon dried)
  • Bay Leaf (1)
  • Butter (3 tablespoons)
  • Flour (3 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the Ingredients: Chop beef into bite-sized cubes, slice mushrooms, carrots, and onions; mince garlic.
  2. Sear the Beef: In a large pot, melt 2 tablespoons of butter; brown beef in batches for 4-5 minutes and transfer to a plate.
  3. Sauté the Vegetables: In the same pot, add remaining butter and sauté onions and carrots for 5-6 minutes; then add garlic and mushrooms for another 3-4 minutes.
  4. Deglaze with Wine: Pour in red wine and scrape the bottom of the pot to lift browned bits.
  5. Combine and Season: Return beef to the pot, sprinkle flour, and stir; add thyme, bay leaf, salt, and pepper.
  6. Add Broth and Simmer: Pour in beef broth to cover ingredients, bring to a boil, then reduce heat and simmer for 150-180 minutes.
  7. Taste and Adjust: Near the end, check seasoning and adjust if necessary.
  8. Serve It Up: Remove bay leaf and serve hot in bowls with fresh thyme or parsley on top.

Notes

Beef Bourguignon tastes even better the next day; refrigerate in an airtight container and reheat gently.
