Butter Chicken Flatbread

A delicious fusion of traditional Indian butter chicken and homemade flatbreads, perfect for a weeknight dinner or casual gathering.

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup water
  • 2 tbsp olive oil
  • 1 lb chicken breast, cooked and shredded
  • 1 cup butter chicken sauce
  • Fresh cilantro, for garnish

Instructions

  1. Make the Flatbread Dough: In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk them together for an even mix. Gradually add the water and olive oil until a dough begins to form. Knead lightly on a floured surface until it comes together nicely (about 5–7 minutes).
  2. Rest the Dough: Once kneaded, cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes.
  3. Cook the Chicken: While the dough rests, heat your butter chicken sauce in a skillet over medium heat until simmering. Add the cooked and shredded chicken, stirring it to coat it easily with the sauce. Let it cook for about 5 minutes.
  4. Roll Out the Flatbreads: After the dough has rested, divide it into 4 equal portions. Roll each piece into a ball. On a floured surface, use a rolling pin to roll out each ball into a flat circle about ¼ inch thick.
  5. Cook the Flatbreads: Heat a skillet over medium-high heat. Cook each flatbread for about 2–3 minutes per side, or until golden and cooked through.
  6. Assemble the Flatbreads: Take a flatbread and spread a generous scoop of butter chicken filling in the center.
  7. Garnish and Serve: Top with freshly chopped cilantro and any other toppings you fancy, like diced onions or a squeeze of lemon juice.

Notes

This dish can be made ahead of time. Just store the dough in the fridge and ensure it reaches room temperature before rolling out.
