  • 6 orange bell peppers
  • 8 ounces elbow macaroni (or pasta of your choice)

  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt, plus more to taste
  • 1 clove garlic, smashed and minced (or ½ tsp garlic powder)
  • 1 cup whole or 2% milk
  • ¼ cup plain Greek yogurt
  • ½ cup panko bread crumbs

Instructions

  1. Prep Your Peppers: Preheat your oven to 375°F (190°C). Slice the top off each orange bell pepper and remove the seeds.
  2. Cook That Pasta: In boiling salted water, cook your elbow macaroni according to package directions until al dente.
  3. Make the Cheese Sauce: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Whisk in the flour.
  4. Add Garlic and Milk: Toss in the minced garlic and slowly whisk in the milk, ensuring there are no lumps.
  5. Cheesy Goodness: Lower the heat and stir in your shredded cheddar cheese until it’s melted and creamy.
  6. Mix It All Together: Combine the cooked macaroni with the cheesy mixture and Greek yogurt in a large bowl.
  7. Stuff the Peppers: Fill each bell pepper with the macaroni and cheese mixture.
  8. Top It Off: Melt the remaining 1 tablespoon of butter and mix with panko breadcrumbs. Sprinkle on top of each pepper.
  9. Bake to Perfection: Bake stuffed peppers for about 25-30 minutes until the tops are golden brown.
  10. Serve and Enjoy: Let cool for a few minutes before serving with a fresh salad or your favorite dipping sauce.
