  • ½ cup chopped parsley (packed)
  • ⅓ cup chopped chives (packed)
  • 2 garlic cloves
  • ¼ cup olive oil (extra virgin)
  • Juice of half a lemon
  • 12 tsp lemon zest
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp onion powder (optional)
  • 2 tsp fresh rosemary (optional)
  • A handful of roasted walnuts (optional)

Instructions

  1. Prep Your Beans: Rinse the canned beans under cold water or soak dried beans overnight and boil until tender.
  2. Gather Your Ingredients: Lay out your chopped parsley, chives, and other ingredients for easy access.
  3. Blend It Up: In a food processor, combine beans, parsley, chives, garlic, and olive oil with lemon juice, zest, thyme, salt, and pepper.
  4. Check The Consistency: Scrape down the sides of the food processor and adjust the texture with more olive oil or water.
  5. Taste Test: Sample the dip and adjust seasoning to your liking.
  6. Chill (Optional): Refrigerate for about 30 minutes to enhance flavors.
  7. Serve it Up: Scoop into a serving bowl and drizzle with olive oil. Garnish if desired.
