Red, White and Blue Pinwheel Icebox Cookies

A delightful and colorful cookie recipe perfect for summer and festive occasions.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red and blue food coloring

Instructions

  1. Cream the butter and sugar together until light and fluffy.
  2. Add the egg and vanilla, mixing until well combined.
  3. Combine the dry ingredients in a separate bowl and gradually mix into the wet ingredients.
  4. Divide the dough into three parts.
  5. Color one part red, one part blue, and leave the third white.
  6. Roll out the white dough into a rectangle.
  7. Layer the blue dough on top of the white, followed by the red.
  8. Roll the layered dough into a log tightly.
  9. Chill the log in the refrigerator for 1-2 hours.
  10. Preheat the oven to 350°F (175°C).
  11. Slice the log into 1/4-inch thick pieces.
  12. Bake for 12-15 minutes until edges are lightly golden.
  13. Cool on a wire rack before serving.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week or frozen for longer storage.
